Directions

Ingredients:

  • 3–4 lb pork tenderloin
  • 2 tbsp olive oil or rendered pork fat
  • 2 tsp kosher salt
  • 1 tsp black pepper
  • 2 tsp fresh rosemary, chopped
  • 2 tsp fresh thyme, chopped
  • 3–4 medium apples, cored and sliced
  • 1 cup chopped walnuts
  • 1 small onion, sliced
  • ½ cup chicken or pork broth

Instructions:

  1. Preheat oven to 375°F. Pat the pork dry and rub with olive oil, salt, pepper, rosemary, and thyme.
  2. In a large roasting pan, arrange the onion slices and apple slices as a bed. Place the pork on top. Sprinkle walnuts around the pork.
  3. Roast for 45–60 minutes, or until pork reaches an internal temperature of 145°F. Baste occasionally with pan juices.
  4. Remove from oven and let rest 10 minutes before slicing. Drizzle with pan juices and serve warm.
