Ingredients

  • 1½ - 2 pounds beef tips or cubed steak (sirloin, chuck, or stew meat)
  • 2 tablespoons butter
  • 1 cup chopped onions
  • 2 cups chopped vegetables (carrots, green beans, zucchini, cabbage, or whatever’s in season)
  • ¾ cup raw cow cream (optional for richness)
  • salt, to taste
  • black pepper or herbs (optional)

Instructions

  1. Heat a heavy skillet over medium-high heat. Add butter.
  2. Add beef in a single layer and let it brown well before stirring. Cook 6-8 minutes until nicely seared.
  3. Season with salt and pepper.
  4. Add onions and vegetables. Stir and cook until tender, about 8-10 minutes.
  5. For a richer finish, reduce heat and stir in the cream. Stir gently for 2-3 minutes.
