Egg and Avocado Breakfast Burrito (Featuring Our Pasture-Raised Eggs)
This easy-to-make breakfast burrito features scrambled eggs, creamy avocado, and optional cheddar cheese wrapped in a warm tortilla. Perfect for a quick, protein-packed start to your day!

Directions

Ingredients:

  • 3 large pasture-raised eggs from Little Captain Creek Farm
  • 1 ripe avocado, sliced
  • 1/4 cup shredded cheddar cheese (optional, can use raw cheese from Little Captain Creek Farm)
  • 1 tablespoon butter
  • 1 whole wheat or flour tortilla
  • Salt and pepper to taste
  • Fresh salsa or hot sauce (optional)
  • Fresh cilantro (optional)

Instructions:

  1. Heat the butter in a skillet over medium heat.
  2. Crack the eggs into a bowl and whisk them together with a pinch of salt and pepper. Pour the eggs into the skillet and cook, stirring occasionally, until they are scrambled and just set. Remove from heat.
  3. Warm the tortilla in the skillet or microwave for about 10 seconds.
  4. Lay the tortilla flat on a plate and layer the scrambled eggs in the center.
  5. Add sliced avocado on top of the eggs, followed by shredded cheese, fresh salsa, or hot sauce if desired.
  6. Roll up the tortilla, folding in the sides as you go to make a burrito.
  7. Garnish with fresh cilantro and serve immediately. Enjoy a delicious, protein-packed breakfast to start your day!
