Ingredients:
- 2 dozen fresh oysters, shucked, with their liquor reserved
- 4 tbsp unsalted butter
- 1 small onion, finely chopped
- 2 celery stalks, chopped
- 2 cups raw cow milk
- 1 tsp salt (or to taste)
- ½ tsp black pepper
- ¼ tsp freshly grated nutmeg
- Fresh parsley, chopped, for garnish
- Optional: dash of hot sauce
Instructions:
- In a medium pot, melt butter over medium heat. Sauté onion and celery until soft and fragrant, about 5 minutes.
- Add oyster liquor and reserved liquid, bring to a gentle simmer.
- Stir in milk, salt, pepper, and nutmeg. Heat gently — do not boil.
- Add oysters and cook 3–5 minutes, just until they begin to curl at the edges. Remove from heat.
