Light, juicy, and full of fresh summer flavor, this grilled turkey breast is perfect for backyard dinners and makes delicious leftovers for sandwiches or salads.

Directions
Ingredients
- 2 lbs turkey breast
- 1/4 cup olive oil
- 2 tbsp fresh lemon juice
- 2 garlic cloves, minced
- 1 tbsp fresh parsley, chopped
- 1 tbsp fresh rosemary, chopped
- 1 tsp fresh thyme leaves
- 1 tsp sea salt
- 1/2 tsp black pepper
Instructions
- In a bowl, whisk together the olive oil, lemon juice, garlic, parsley, rosemary, thyme, salt, and pepper.
- Place the turkey in a shallow dish or resealable bag and pour the marinade over it. Refrigerate for at least 1 hour (or up to overnight).
- Preheat the grill to medium heat.
- Grill the turkey for 8-10 minutes per side, or until the internal temperature reaches 165°F.
- Remove from the grill and let the turkey rest for 5-10 minutes before slicing.
Serving Suggestion
Serve with grilled sweet corn, fresh tomato and cucumber salad, or roasted baby potatoes for a simple summer meal. Leftovers make excellent sandwiches the next day!
